PASTEURIZATION AND PROCESSING
Our fresh crabs are steam cooked and then allowed to cool. The meat is hand-picked, graded, placed in cans,hermetically sealed and pasteurized. Pasteurization is a heat treatment process that destroys natural pathogenic microorganisms to extend shelf life without adding artificial preservatives. Once pasteurized, the product has a shelf-life of 15 months in cans under proper refrigeration.
